Skilpadjies — meaning "little tortoises" — are a true South African braai delicacy. Seasoned lamb liver wrapped snugly in caul fat, spiced with coriander, onion and Worcestershire sauce, then grilled over hot coals until the fat crisps up and the liver is perfectly cooked inside. Rich, smoky and deeply satisfying.
