Russians are a South African braai staple — thick, juicy sausages made from beef and pork, seasoned with pepper and coriander, then cold smoked for 6 hours for that deep, rich smokiness that sets them apart from any ordinary sausage. Fully cooked during the smoking process, they just need a quick blast on the braai, in a pan or the air fryer to heat through and get that gorgeous caramelised crust.
